Stove Top Easy Chicken Bake



Prep: 10 minutes Total: 30 minutes

Ingredients:
1 pkg Stove Top Stuffing Mix for Chicken
1 1/2 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 can condensed cream of chicken soup
1/3 cup sour cream
1 bag (16 oz) frozen mixed vegetables, thawed, drained



Directions:

Preheat the oven to 400 degrees F.

Boil 1 1/2 cups of water and 1/4 cup butter in medium saucepan.



Stir in stuffing mix.



Cover and remove from heat. Let stand 5 minutes. Fluff with a fork.



In a 13 x 9-inch baking dish; add soup.



Add the sour cream.



Add the chicken chunks.



Add the vegetables.



Mix it all together.



Top with the stuffing.



Bake 30 minutes or until chicken is cooked through. (I baked mine for a total of 45 minutes.)



Makes 6 servings.

Verdict:

Laura - Thumbs Up - This was like chicken pot pie but with stuffing instead of a crust. I liked the creaminess of the vegetables.

Randy - Thumbs Down - Randy didn't taste this; here's why: He hates stuffing and doesn't eat green beans, peas, corn that is not on the cob or cooked carrots. If there were no veggies or stuffing, he would have tasted it and probably liked it.

Nathan - Thumbs Up - Nathan ate the chicken and stuffing. He wasn't interested in the green beans, but he has eaten them before.

Leftovers: The leftovers were great. I'm so glad that I get to eat them all!

Freestyle Apple Tart



Prep: 15 minutes Total: 40 minutes

Ingredients:
1 ready-to-use refrigerated pie crust (1/2 of 15 oz. pkg.)
4 oz cream cheese
3 red and/or green apples
1/4 cup sugar
2 Tbsp. flour
1 tsp cinnamon sugar
1 cup thawed Cool Whip Whipped Topping (I used vanilla ice cream instead.)



Directions:

Heat oven to 450 degrees F. Line 9-inch pie plate with crust.



Carefully spread cream cheese in 6-inch circle in center.



Slice apples and place in large bowl.



Add sugar and flour.



Toss apples.



Spoon over cream cheese.



Fold crust partially over apples.



Sprinkle with cinnamon sugar.



Bake 25 minutes, covering loosely with foil for last 5 minutes.



Cool. Serve with whipped topping or ice cream. Refrigerate leftovers.



Makes 8 servings.

Verdict:

Laura - Thumbs Up - This recipe is fast and easy. It is very delicious. I made this right before we sat down for dinner. It had cooled down for an after bath treat for Nathan.

Randy - Thumbs Up - I like the tart but would like it better without the cream cheese.

Nathan - Thumbs Up - Nathan loved this. He also loved the ice cream.

Leftovers: The leftovers are great. I heated my up in the microwave and add ice cream. So yummy!!

Creamy Potato Salad



Prep: 30 minutes Total: 1 hour (Including refrigerating)

Ingredients:
1 lb red potatoes, unpeeled, cut into chunks
1/4 cup Italian dressing
1/3 cup Miracle Whip Light dressing
1 1/2 tsp dijon mustard (I didn't have any so I just used yellow mustard.)
1 hard-cooked egg, chopped
4 green onions, sliced (I omitted these.)



Directions:

Cooke potatoes in boiling water 15 minutes or until tender.



While the potatoes are cooking, mix salad dressing in a large bowl.



Add mustard.



And, Miracle Whip.



Drain the potatoes and rinse with cold water until cooled; drain again.



Add the potatoes to the dressing.



Then, add the egg; mix lightly.



Cover. Refrigerate at least 30 minutes.



Makes 4 servings, 3/4 cup each.

I served this with the Simple Southern-Style "Unfried" Chicken.

Verdict:

Laura - Thumbs Up - This potato salad was zesty and delicious. I will make this again.

Randy - Thumbs Down - It was too spicy and too much mustard. (Side Note: I used the yellow mustard that Randy loves to drowned his turkey dogs in and I used Randy's favorite salad dressing. He still gives it a thumbs down. Go Figure!!)

Nathan - Thumbs Up - Nathan ate a whole serving of this salad.

Leftovers: The leftovers were great. Nathan and I ate this again for dinner tonight. Yum, Yum!

Spicy Chicken Mac Skillet



Prep: 10 minutes Total: 30 minutes

Ingredients:
1 pkg Kraft macaroni & Cheese Dinner
1 Tbsp olive oil
1 lb boneless skinless chicken breasts, cut into bite-size pieces
1 can (14 1/2 oz) diced tomatoes and green chilies, drained (I didn't have this so I used chunky salsa.)
1 can (14 1/2 oz) diced tomatoes, drained
1 can (10 3/4 oz) condensed cream of chicken soup
1/2 cup Mexican style shredded cheese



Directions;

Prepare mac & cheese as directed on package.



Heat oil in large skillet on medium-high heat.



Add chicken; cook until lightly browned and cooked through.



Reduce heat to medium; stir in tomatoes.



Stir in salsa.



Stir in soup. Cook 5 minutes, stirring occasionally.



Add mac & cheese; stir until well blended.



Sprinkle with cheese; cover.



Cook 5 minutes or until cheese is melted.



Makes 6 servings, 1 1/3 cups each.

Verdict:

Laura - Thumbs Up - This was yummy! I will make this again.

Randy - Thumbs Down - I don't like cooked tomatoes. It looked great just as the cooked chicken and the mac & cheese, but not with all the stuff mixed together.

Nathan - Thumbs Up - Nathan loved this. He ate a whole serving.

Leftovers: The leftovers were super cheesy. I ate some for breakfast the next day.

Pronto Saucy Pasta Skillet

This recipe is quick and simple.



Prep:5 minutes Total: 20 minutes

Ingredients:
1 can (14 1/2 oz) diced tomatoes, undrained
1/2 lb (8 oz) your favorite uncooked bite-sized pasta
1 can (15 oz) cannellini beans, drained, rinsed
2 cups fresh broccoli florets
1 jar (4 1/2 oz) sliced mushrooms, drained (I used fresh mushrooms.)
1/2 cup ranch dressing
1/4 cup grated parmesan cheese



Directions:

Cook pasta as directed on package.

Add tomatoes to skillet.



Add mushrooms.



Add broccoli florets.



Add beans.



Stir in the ranch dressing. Bring to a boil. Reduce heat to medium and simmer for 10 minutes.



Top with cheese; cover.



Let stand 2 to 3 minutes or until cheese is melted. Stir in pasta.



Makes 4 servings.

Verdict:

Laura - Thumbs Up - I like this pasta dish. It's fast and simple. The next time I make it, I'll add more veggies and use less pasta.

Randy - Thumbs Down - I don't like pasta or the tomatoes.

Nathan - Thumbs Down - Nathan is not a big pasta fan. He ate all the beans and broccoli off his plate.

Leftovers: This reheated greatly. I had some leftovers for breakfast one morning. It was great!
