Layered Enchilada Bake


Prep: 15 min. Total: 1 hour 35 min.

Ingredients:
1 lb lean ground beef (I used ground turkey.)
1 large onion, chopped (I omitted the onion.)
2 cups salsa (I used chunky.)
1 can (15 oz) black beans, drained, rinsed
1/4 cup Italian dressing
2 Tbsp taco seasoning mix
6 flour tortillas (8 inch)
1 cup sour cream
1 pkg Mexican style shredded cheese



Directions:
Preheat oven to 400 degrees F. Spray a 13 x 9-inch baking dish with non-stick spray.

Brown meat with onions in large skillet on medium-high heat; drain.



Add salsa, beans, dressing and taco seasoning; mix well.



Arrange three of the tortillas in single layer on bottom of baking dish. I cut my tortillas in fourths to make it easier to fit in the baking dish.



Cover the tortillas with half of the meat mixture.



Next, layer with half of the sour cream. I spread the sour cream across the top with a rubber spatula.



Top with half of the cheese.



Repeat all layers starting with tortillas, meat mixture, sour cream and ending with the cheese. Your baking dish will be full to the top.



Bake, covered with foil for 30 minutes.



Remove the foil. Bake an additional 10 minutes or until casserole is heated through and cheese is melted.



Let stand for 5 minutes before cutting to serve.



Makes 8 servings.

To cook at a later date; follow these directions:
Assemble the casserole in the baking dish and cover with plastic wrap. Freeze assembled uncooked casserole for up to 3 months. Preheat oven to 400 degrees F. Bake, covered with foil for 1 hour. Remove foil. Bake an additional 15 to 20 minutes or until casserole is heated through and cheese is melted. Let stand 5 minutes before cutting to serve.

Verdict:

Laura - Thumbs Up - This was so delicious. It is full of flavor. I think that shredded chicken would work great in this casserole. You could also switch up the veggies and use corn, fresh tomatoes and/or black olives. I can't wait to eat the leftovers. I'm going to make this again.

Randy - Thumbs Down - Too juicy and too many ingredients touching each other in one pan. Randy ate a hot dog and corn on the cob for dinner.

Nathan - Thumbs Up - Ate a whole serving and he used one fork in each hand. I guess he couldn't shovel it in fast enough with only one fork.

Leftovers: This casserole was just as good as it was the first night. I reheated it in the microwave. Nathan and I enjoyed it for dinner again tonight. Randy had grilled cheese.
