Triple-Layer Peanut Butter Brownies

I know it's "What's Cooking for Dinner?", but I have to throw in some desserts once in awhile. These brownies take some time to make, but they are worth it. We have lots of leftovers, so come by and help us eat them.



Prep: 40 minutes Total: 2 hours 10 minutes

Ingredients:
1 pkg brownie mix, prepared in 13x9-inch pan
1 cup cold milk (I used vanilla soy milk.)
1 pkg Jell-o Vanilla Flavor Instant Pudding & Pie Filling
1 cup creamy peanut butter
1/2 cup powdered sugar
1 1/2 cups Cool Whip Whipped Topping (Do not thaw.)
3 squares Baker's Semi-Sweet Baking Chocolate
1/2 cup peanuts, coarsely chopped (I omitted these.)



Directions:

Prepare your brownie mix. I mixed water, oil and eggs with the brownie mix.



I poured the mixture in a prepared pan that was sprayed with butter flavored Pam.



I baked my brownies for 26 minutes.



While your brownies are cooling, whisk milk and pudding mix for 2 minutes.



Add peanut butter and sugar; mix well.



Cover and refrigerate pudding mixture until brownies are completely cooled.



Once your brownies are cooled, spread pudding mixture over brownies.



Microwave whipped topping and chocolate on HIGH 1 minute, stirring every 30 seconds.



I microwaved the mixture for a total time of 1 minute 30 seconds, while stirring every 30 seconds. Then, I stirred until all the chocolate was melted.



Spread over pudding mixture. Then, sprinkle with nuts, if you are adding them.



Refrigerate for 1 hour. After 1 hour in the refrigerator, my top chocolate layer was still runny. I was thinking that it would get hard. Check the leftover section to see if it hardens up overnight.



Refrigerate leftovers.

Makes 32 servings.

Verdict:

Laura - Thumbs Up - These brownies are so good. They are very rich. You might need to have a glass of milk close by when you eat them. Yum! Yum!

Randy - Thumbs Up - These are really good and very sugary. Randy had two brownies for dinner.

Nathan - Thumbs Up - Nathan loved them. I think he would have eaten the whole pan. After he ate his brownie, he ran circles around the house. No joke!

Leftovers: These are so yummy every time I eat them! The chocolate topping did thicken up a bit, but is still gooey.
